You can easily place as many filtering options as you wish on shop and product categories pages and allow users to sort/filter products without page refresh in more convenient and intuitive way.
All filtering and sorting options (including the default WooCommerce sort order and products per page) could be easily set to use AJAX or not, depending on your store requirements or personal preference.
